Taco Adjuster was founded by Adrian Cornish, who earned a bachelor’s degree in biology from a well-known university in Florida. Adrian is a former Bottlenose Dolphin Trainer who led a government-funded study examining the effects of chlorine bleaching on coral reef degradation. He held multiple licensing agreements related to medical apparatus, including a patent in biomechanics, and has collaborated with the LSU School of Kinesiology through LSU’s business incubator. Adrian possesses several insurance licenses, covering life, health, and property and casualty adjusting. Throughout his career, he has consistently excelled within the insurance sector, notably serving as a State Farm property and casualty adjuster where he ranked among the top 1% of producers and achieved one of the company’s lowest claims reopen rates due to effective claim management. Prior to his tenure at State Farm, Adrian gained experience as a roofing contractor to become a more affective property and casualty adjuster where he also excelled.

After departing State Farm as a leading catastrophe and large loss adjuster, Adrian founded Taco Adjuster with the assistance of experienced adjusters from some of the largest insurance companies across the country.  As a former State Farm staff adjuster, Adrian was routinely among the last to leave catastrophe sites—part of the “cleanup crew.”  Being among the last adjusters to depart from operations, he took on responsibility for hundreds of unresolved claims that had been left behind by adjusters who had already exited.  He was also routinely made responsible for handling some of the most complex claims on each deployment.

What he consistently saw, reading though inherited claims, was frustrating:

• Inefficient claim handling.
• Thousands of dollars routinely left on the table.
• Premature denials that could have been approved with further action.
• Inexperienced, new adjusters lacking the knowledge to fully advocate for policyholders.

Many claims weren’t denied because they weren’t valid. They were denied because the adjuster did not know or did not care to take additional steps to get them approved. Taco Adjuster was founded to capitalize on those missed opportunities.

Why Taco Adjuster Exists

After evaluating well over a thousand claims in roughly twenty states—as a large loss, catastrophe adjuster in concert with his experience as a former roofing contractor—Adrian realized homeowners and agents needed insider-level knowledge to level the playing field. Contrary to popular belief agents are not insiders, they are contractors on the outside looking in.

That is why he created the Insider Secrets Master Class and a consultation program. These are designed to equip policyholders with advanced claims knowledge—often exceeding that of most agents and practicing adjusters—so policyholders can have the best opportunity to win in their fight for approvals.

The Story Behind the Name

Taco Adjuster is named after Adrian’s fourteen-year-old chihuahua, Taco. Taco came into Adrian’s life during a difficult divorce. He was rescued in a rough condition—malnourished, injured, and overlooked. Over time, Taco became family and Adrian’s constant companion. For fourteen years, Taco accompanied Adrian on all of his catastrophe deployments across the country—sometimes lasting up to six months, traveling tens of thousands of miles. Through hurricanes, hail/windstorms, tornados, busted supply lines, fires and long deployments, Taco was by Adrian’s side.

Taco’s health suddenly declined due to congestive heart failure, so the company was named after him. Taco was given two weeks to live in November 2025, but he is still going strong. Taco represents loyalty, resilience, and an unwavering dedication to service. That is the same level of dedication Taco Adjuster brings to every policyholder we serve.
